Great find for a video. Never seen the way he holds the knife before when he is carving. Anyone around who has a glimpse into that technique a bit more, as to why it is used (fatigue, control, etc) ?
Carved up plenty of deer, but a steer looks like a whole other ballgame. One of those things to do once to say its been done.
